Gluten free Sept 12

I suppose someday I will look back at these records and wonder at how inadequate these meals were, but today we did better

Breakfast:  Smoothie with bananas, blueberries, persimmon, nanogreens and supplements.   Oh and I add 1/3 cup almonds to try to boost the calories in Bill’s smoothie.

Lunch:  Stir fry with broccoli, celery, tofu and rice,    A salad with leaf lettuce, kale, celery including leaves, basil, avocado, tomato.  Then the strawberry shortcake

Dinner, bread with hummus, nuts, split pea soup

Learning and trying

Thank you Lois and Darlene for your recipes.   I will try them soon.   I feel like a stranger in a foreign country with this new way of eating.   I had no idea we were consuming that much wheat and at first thought it would be no big deal.   HA!

Today I got out the package of Organic multigrain bread mix that I found at the store this week..   The ingredients are all organic and include:  brown rice flour, sorghum flour, tapioca starch, quinoa flour, evap cane juice, xantham gum, yeast, and salt.    ‘

Notice how dense it is.   It holds together quite good and slices easily.   It is edible with something on it.   I think it will be okay for sandwiches thinly sliced, if the real thing isn’t around..    But it is NOT bread, nor does it taste like it.   Still I am thankful we have food to eat.

I also tried this mix using the biscuit recipe on the package

This accidentally is not organic.   The ingredients are brown rice flour, non aluminum baking soda, non GMO cornstarch, vanilla bean powder, sea salt, baking soda, xantham gum.     Although this baked up fairly good, because it is not organic, I will try to come up with something similar from scratch.

with the strawberries and the “ice cream” (not real) we nearly fooled ourselves and it was a very pleasant treat.

I also made a batch of strawberry jam for a gift.

Gluten-free Sept 11

Breakfast – only had time for our smoothies and supplements

Lunch:  We tried a new patty we found called Sunshine Garden Herb which consists of brown rice, sunflower seed, carrots spices, and sea salt.   They were a bit bland for us so won’t buy them again.  With that we had Quinoa cooked in vegetable broth, broccoli, cabbage/lettuce salad and hummus (on the quinoa.   So we did better today

Dinner was another fruit smoothie and some vegan “ice cream”

I also signed up for a gluten free baking class on Craftsy.   I feel so lost in this world.

An ordinary day?

Maybe, that is if there is such a thing, this was almost ordinary.   I had a doctor’s appointment early this morning for a curling toenail.   Somehow, between being early, the visit, the x-ray to make sure there were no spurs, and then going back to the doctor to make an appointment to have him remove the nail temporarily, we used up 2.5 hours.    That was bad enough, but to make things really interesting, I managed to forget to turn off the lights when we arrived.    It was just getting light when I left home, and very much daylight when I arrived there.    So the next nearly two hours was spent relaxing while we waited for AAA to come with jumper cables.   By the time we arrived home, it was noon and time to do the lunch tasks.

Gluten-free Sept 10

Breakfast:   Kidney beans over baked potato plus blueberry, banana smooth with supplements

Lunch:  Hummus and corn tortillas

Dinner:   Banana, Strawberry smoothie with greens and supplements again

 

This is inadequate on vegetables, I know.   However, I am having a difficult time with the veggie part.   He tells me beans and potatoes ARE vegetables.

A new pair of socks and some weeding

This pair is all wool, so they will need to be hand washed.

The wool is some of my oldest and I purchased it in Australia about 14 years ago.   As you can see by the label it says it was on sale for 1.19.   At that time one American dollar was worth two Australian dollars.

Between knitting and other chores, I did take a look at the garden which has so outrun me.

And I did actually get most of this side weeded.  Maybe after my appointment in the morning, I’ll be up to more, but since I’m having a toe worked on, I may have to just sit and baby my foot.    What do you think?

Gluten-free Sept 9

Since DH started the deck at 6 this morning, he only wanted his smoothie with supplements.   So that’s what he had for breakfast and again at lunch with different fruits.     Because he is trying to gain weight, I put almonds in the breakfast drink and cashews in the lunch drink.

Supper was stir fry with rice, tofu and veggies.

A FINISH!

I was sewing and was so happy to be able to finish this top.    I’m quite happy with the way it turned out and in the future will probably make a couple more for the military hospital.

Pillowcases and canning

There are only another 10 pillowcases finished.

However, most of the canning is now done.   I am still waiting on more tomatoes to ripen to make salsa and will be doing some jam again soon.  Today’s efforts produced 20 pints of split pea soup, 10 pints of lentils, and some jam.
