The little fox and cucumbers

I’m currently working on this little fox, but progress is slow right now, and there are many small pieces.

The garden also beckons me and there are now 9 trays of cucumbers on the dehydrator.  These will be great for sauces, dips, and flavoring.   Although there are still many cucumbers to share.  I am only making a very few pickles this year, because there are still some from last year.   I am also looking for a great relish recipe if anyone has one and is willing to share.

The current plan is rest and relax tomorrow.   I hope you will join with us in enjoying the day.

    I have never seen anyone dehydrate cucumbers. How do you prepare them for that process and what kind of dehydrator do you use. Also after they are done, how do you store them. I have a good relish that I will send to you later today. Have visitor coming in a few mins.:)

  2. Dehydrated cucumbers! That’s a new concept for me…
    I have a fairly simple relish recipe – my kids prefer it to the store bought stuff.
    Green Cucumber Relish:
    7 large regular cucumbers
    4 green peppers, seeded
    1-2 sweet red peppers, seeded
    2-3 med.-large white onions, peeled
    1/2 pickling salt
    2 c. white vinegar
    2 1/2 c. sugar
    2 tsp. celery seed
    1 Tbsp. mustard seed
    Grind vegetables with the coarse blade of a meat grinder. Mix in the salt, and cover all with cold water. Let stand 1-2 hours. Drain well, pressing out as much moisture as possible. Boil remaining ingredients together for 5 minutes. Add vegetables. Simmer and stir for 5-6 minutes, then ladle into sterilized jars; seal and process as usual. Makes about 4 pints.
